Anzac Biscuits

Here is an Australian biscuit that is institutional where ever you go and is probably on of the first biscuits you learn to make in Australia as they are quite quick and easy.

1 cup plain flour
1 cup rolled oats
1 cup desiccated coconut
1 cup brown sugar
Half a cup of vegan margarine
3 tsp golden syrup
1 tsp bicarbonate of soda
2 tbsp boiling water.

Method
1. combine the flour, oats, coconut and sugar in a bowl.
2. melt the margarine and the golden syrup in a saucepan over a low heat
3. Mix the bicarbonate of soda with the water and add to the golden syrup
4. pour the liquids into the dry ingredients and mix well.
5. Spoon dollops of the mixture, leaving space for the biscuits to spread out a bit.
6. bake for 15 to 20 minutes depending if you want a soft biscuit or a crispy one, at 180C
7. allow to full cool and store in an air tight container.
