Baklava
I used to love getting Baklava from the shops on Sydney Road before heading off to the Coburg Drive-in. This recipe is a vegan version of those sweet little treats I used to eat all those years ago.
200g Filo pastry
100g Vegan margarine
200g Almonds
200g Pistachios
For the syrup
150g Brown sugar
100g Golden syrup
100mlWater
1. Unfold the filo pastry and cut to the exact size of the baking tin.
2. Melt the vegan margarine.
3. Crush the pistachios and almonds so that they are still quite chunky
4. Using a pastry brush, coat the bottom of the baking tin with some vegan margarine
5. Layer a sheet of filo pastry on the bottom of the tray and brush with vegan
margarine.
6. Sprinkle the nut mixture over this sheet.
7. Repeat steps 5 and 6 until you are left with a layer of nuts sprinkled on
the top.
8. Cut the baklava into squares or diamonds.
9. Bake in the oven till the top goes golden brown.
10. Put the brown sugar and the water in a pot
11. Dissolve the sugar and bring to the boil
12. Add the golden syrup and cook until the mixture reduces and becomes syrup
13. Remove the baklava from the oven and immediately pour over the hot syrup.
14. Allow to cool in the pan for a few hours before removing.
