Banana Bread

I was staying at a mates place once and they used to have a possum that would visit them. When I was there the possum had a baby and we went out to feed it. The little baby possum would not let go if its mother no matter what. My mate jokingly bet me that I couldn’t get the baby possum off the mothers back. I accepted his bet and then when into the kitchen and got some banana bread that I hade made earlier that morning. I just gave the little one a whiff and he was straight off his mothers back eating out of my hand.

200g Vegan margarine
150g Soft brown sugar
150g Golden castor sugar
1 Tsp Cinnamon
1 tsp Vanilla essence
3 ripe Bananas
500g Spelt flour
4 tsp of Baking powder
350ml Soy milk
150g Brazil nuts
80gs Coconut


1. Place vegan margarine into a mixing bowl and beat until smooth
2. Add the soft brown sugar and the golden castor sugar
3. add the cinnamon and the vanilla
4. beat until smooth
5. Add the mashed bananas and beat
6. add the spelt flour, baking powder and soy milk
7. beat with a wooden spoon
8. Add the chopped brazil nut and the desiccated coconut
9. Pour into lined loaf tin.
10. top with fresh banana
11. bake at 180C for approximately 30 minutes
12. just before the banana bread is cooked take out of the oven and drizzle some golden syrup over the top.
13. place back in the oven for 5 to ten minutes
14. remove from the oven and allow to cool.
