Peanut Butter and Banana Brownies

These are lovely, soft brownies – and they are gluten free! What more could you ask for!

Ingredients
2 cups of gluten free flour
2 cups of golden castor sugar
¾ cup of cocoa powder
1 tsp baking powder
1 tsp salt
1 cup of soy milk
1 cup peanut butter
Pure icing sugar


Method
1. roughly mush the bananas and the peanut butter.
2. add the soy milk and beat together
3. add the sugar and mix
4. sift in the coco power and the baking powder
5. sift the gluten free flour in as well
6. fold all the mixture together
7. pour into a baking tray lined with grease proof paper.
8. Preheat the oven to 175 degrees C.
9. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt.
10. Bake for 25 to 30 minutes in the preheated oven.
11. remove from the oven and sprinkle with pure icing sugar
12. Let cool before cutting into squares.

Serving Suggestion
Sprinkle with castor sugar and enjoy.
