Pineapple and Passion Fruit Sorbet



Pineapple and Passion fruit Sorbet

The beautiful aroma of the passion fruit really adds depth to this sorbet.

Prep time 1 hour


Ingredients
500ml water
500g-castor sugar
1½ litres of freshly squeezed pineapple juice
6 passion fruit

Method
1. Heat the water a large pan. Add the sugar and allow to dissolve. Bring the water to the boil and remove any scum that appears.
2. Remove from the heat and leave to one side.
3. Once cool, mix the sugar solution and the pineapple juice together.
4. Add the pulp from the passion fruits.
5. Pour into an ice cream maker and freeze according to manufacturers settings.
6. Transfer to a freezer safe container and place in the freeze to firm up completely.
