Quinoa Coconut Spice Cookies



Quinoa Spice Cookies

These cookies are incredible, you will not be able to stop once you’ve started. They are also wheat free and have the added benefit of having all the goodness of quinoa so enjoy!

Ingredients
60g Golden syrup
100g Vegan margarine
2 cups of cooked quinoa
150gs desiccated coconut
150g sugar
100g gluten free flour
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cardamon
2 teaspoons baking powder

Method
1. Heat the golden syrup and the margarine on the stove top.
2. In a mixing bowl, combine the quinoa, sugar, coconut and flour. Add in the spices and baking powder, mix well.
3. Pour the melted margarine and golden syrup mix into the dry ingredients and mix to form a slightly wet batter.

5. Line a baking tray with grease proof paper and spoon on the mixture onto the tray. Allow 2 teaspoon of mix for each cookie and make sure to space them quite far apart from each other and they will spread quite a lot in the oven.
6. Cook for 15-20minutes at 170ºC.

Top Tip
Allow the cookies to cool fully before removing them from the tray.
