Banana Buckwheat Pancakes With Fresh Figs and Berries

Here is a buckwheat pancake that is perfect for coeliacs and people who are intolerant to what and gluten. As there is no gluten these pancakes they are nice and soft, but you have to be careful with them as they can be fragile.

Toppings

Fresh figs
Strawberries
Raspberries
castor Sugar

1. Take the stalk off the figs and chop into quarters
2. top the strawberries and chop into quarters
3. place all the fruit into a bowl with the castor sugar
4. add the vanilla and stir gently
5. leave to the side for an hour or two to marinate and allow the berries to release there juices for a beautiful sauce

For the pancake

1 banana
Juice of 1 lime juice
1 cup of buckwheat flour
150gs castor sugar
150ml coconut cream
1 tsp baking powder
100ml soy milk


1. mash the bananas with the lime juice
2. add the buckwheat flour
3. add the castor sugar
4. add the coconut cream, soy milk and the baking powder
5. beat until smooth.
6. heat up a fry pan and add some oil
7. pour batter into the middle of the fry pan and even it out a little bit.
8. cook until small bubble start to pop
9. flip and cook on the other side
10. repeat with the rest of the mixture.
11. top with fresh fruit and enjoy.
