Fig and Pistachio Pudding



Fig and Pistachio Puddings


I make these puddings in individual moulds but the recipe can also be made in a standard cake tin. If you want to do this remember to adjust the cooking time as the pudding will take longer to cook.

Prep time 15mins
Cooking time 35mins.

Ingredients
250gms Margarine
250 gms Molasses
6 dried figs
450gms Self raising flour
Zest of 1 orange
Chopped pistachios
150 mls Soymilk

Method
1. Heat the margarine and the molasses over a low heat
2.Put the flour and finely chopped dried figs and mix well.
3.Grease and flour the moulds and put greaseproof paper in the bottom. Dust the moulds lightly with flour
4.Add the orange zest, cashews and pistachios.
5.Add the melted margarine and molasses.
6.Stir in the soymilk.
7. Fill the moulds to ¾ full.
8. Cook for 30-40 mins at 180º depending on the size of your puddings.
Allow to cool and remove from the moulds.

Serving Suggestion
Serve with fresh fig slices and a drizzle of golden syrup.
