Golden Syrup Dumplings


This is one of my favorite childhood puddings! My Mum made the very best golden syrup dumplings but mine aren’t too bad!

Prep time 5mins
Cooking time 10mins

Ingredients
½ Sugar
1 ½ cup Water
½ cup of Golden syrup
3 tbs Margarine

For the dumplings:
1 ½ cup Self-raising flour
4 tbs Margarine
½ cup Sugar
½ cup Soymilk


Method
1. In a saucepan combine the water, margarine, sugar and golden syrup. Heat until the ingredients have melted and combined.
2. Put the sugar, flour and margarine in a bowl. Rub in until in resembles coarse breadcrumbs.
3. Add the soymilk gradually. Stir with a wooden spoon adding soymilk until you have formed a soft dough.
4. Bring the syrup up to the boil and drop in teaspoons of the dough.
5. Poach the dumplings in the syrup for about 10 minutes. The balls should puff up slightly and turn a golden color. Flip them over half way through.
6. The flour from the dumplings will have thickened the sauce.

Serving Suggestion
Serve warm the syrup and a dollop of vegan ice-cream or cream.
