Passionfruit Melting Moments
In Australia these biscuits are also known as yo-yo’s because of their shape and size and there casn be bitter battle of what they are called depending on where you come from. . But what ever you call them, once you try them you will certainly be coming back for more. My nana made a super version of these probally a bit smaller than these, but I think my vegan version is almost as nice!

Ingredients
100 gms Margarine
100 gms Icing sugar
150 gms Plain flour
75 gms Corn flour
For the icing:
150 gms Margarine
150 gms Icing sugar
1 tbs Lemon juice
1 passion fruit
Method
1. Beat together the margarine and the icing sugar.
2. Add the plain flour and the corn flour and fold in.
3. Shape the dough into 1 inch balls in your hands and then flatten into disks
about ¾ cm think. Flour your hands to stop the dough from sticking.
4. Press a fork down lightly onto the biscuits to leave an imprint.
5. Cook for 10-15 mins at 180º depending on the size of your biscuits.
Leave the biscuits to cool while you make the icing.
For the icing:
1. Beat sugar and margarine together.
2. Add the lemon juice and the pulp from the passion fruit.
Serving Suggestion
Sandwich two of the biscuits together with a dollop of the passion fruit icing.
