Balsamic Glaze

Balsamic Glaze is a sweet sticky sauce that is used in many restaurants as a decoration as well as to bring contrast to a dish. It is quite easy to make and it will give an added boost to both flavour of the dish as well as presentation.

Ingredients

500ml Balsamic vinegar
200g Castor sugar

1. in a frying pan add both the balsamic and the sugar
2. heat and stir so that all the sugar crystals have dissolved.
3. once dissolved bring to a boil and reduce the vinegar
4. using a spoon to test the consistency every now and again, by placing a drop of the reduction onto a plate.
5. reduce to the required consistence
6. remove from heat
7. allow to cool
8. bottle and use as needed.
