Mediterranean Pizza

Here is a delicious cheese-free pizza. It has tahini drizzled over the top to lend some of its creaminess to the pizza.

Preparation time 45 minutes total
Cooking time 35 minutes for aubergines and 15 minutes for the pizza
Proving time for the dough approximately 2 hours


For the Pizza Base.

250g flour
2 tablespoons olive oil
1/2 teaspoon salt
100 ml lukewarm water
2 teaspoons dried yeast
1/2 teaspoon sugar

For the Pizza toppings

Tomato Paste
Minced Garlic
Roasted aubergine chunks
Artichoke hearts
Capers
Fresh tomatoes
Sundried tomatoes
Tahini

1. Pour the lukewarm water into a bowl and add the sugar and the yeast.
2. Stir to dissolve yeast and set aside of 10 minutes.
3. Put the flour and the salt in another bowl.
4. Add the olive oil and the warm water and stir to mix.
5. When the mixture starts to come together pour out onto a floured bench and knead until the dough becomes smooth and stretchy.
6. Oil a bowl and place the dough back in the bowl to prove. Place cling film over the top and allow to double in size.
7. When the dough has doubled in size knock it back. Roll the dough out to the size of your pizza tray.
8. Pre heat the oven to 190°C.
9. Take some minced garlic and mix it with the tomato paste.
10. Spread the paste over the pizza base to stop it from drying out and forming a crust.
11. Take some of the roasted aubergine chunks and spread them out over the pizza.
12. Take the sundried tomatoes, artichoke heart, capers, and spread them evenly over the pizza.
13. Finally slice the fresh tomato and evenly space them out on the pizza.
14. Place the pizza in the oven and bake for 10 to 15 minutes or until the pizza crust puffs and turns golden brown.
15. Remove the pizza from the oven and drizzle tahini over the top.
16. Cut and serve.
